Thai food recipes - Kaeng Khua Saparot (Prawn and Pineapple Curry)

250 ml/8 fl oz coconut cream
1/2 fresh peeled and chopped pineapple
2 tbsp fish sauce
2 tbsp Thai red curry paste
2 tsp sugar
350 g/12 oz shelled and deveined raw tiger prawns (how to deveined prawns)
2 tbsp chopped fresh coriander
4 shredded spring onions to garnish.Serve with cooked rice.

Cooking Procedure :
Place the coconut cream, pineapple, curry paste, fish sauce and sugar in a saucepan.
Heat gently over medium heat for 5 minutes or until boiling.
Add the shrimp and cilantro and simmer for 5 minutes, or until cooked shrimp.
Sprinkle with sliced ​​scallions.
